Spaghetti Squash Alfredo

Ingredients

1/2 ea Spaghetti squash

Salt & pepper

1 lb Hamburger

2 Tbs Garlic, minced

1 Tbs Italian seasoning

1 lb Mushrooms

1 package Alfredo sauce mix

Directions

Preheat oven to 400°F. Halve squash lengthwise and scoop out seeds. Season squash generously with salt and pepper, then place, cut side down, on baking sheet. Roast squash until fork tender, 30-45 minutes, depending on whether you want it slightly crunchy or soft.

Meanwhile, set a medium skillet over medium-high heat. Add hamburger, garlic, Italian seasoning, and salt & pepper to taste and cook, breaking the hamburger up with a potato masher into small chunks, until fat renders and hamburger is cooked, 10-15 minutes. Pour off any excess oil or fat.

Chop mushrooms into bite-size pieces and use any poured off oil or fat from the hamburger to saute them until golden brown. Add olive oil if needed.

Mix the Alfredo sauce according to the instructions on the package.

When squash is finished, run the tines of a fork through the cooked squash so flesh separates into spaghetti-like strands.

Mix all the cooked ingredients together and serve.
